Aight, this my fav way to BBq chicken.
Go to the supermarket, get some Jerk Sauce (Grace makes the best stuff, if you can't get that then Mr. Goudas). Cut the chicken to good sizes, not too small or too big. Chicken thighs are good. Cut out any of the fat. Soak the chicken in lime and/or lemon juice, then wash off any slimey stuff (usually found under the skin). Drain/dry the chicken, and then let it sit in the Jerk souce overnight if possible (or at least for 30 minutes).
Clean your grill! Oil it a bit... Let it heat up on high for about 5 minutes or so, then turn it down low, low, low! Cook the chicken on real low, like 15 minutes or more per side. Brush more sauce on to keep it moiste.
Serve with Peas and rice (http://www.recipes4us.co.uk/Cooking%20by%20Country/West%20Indies%20Speciality%20dish%20Rice%20and%20P eas.htm)!!!!
Enjoy! :nne:
P.S.: If you like REAL hot, there is stuff from Grace called "Jerk Seasoning" which comes in a jar. Season it with that first, then add the sauce later. This stuff is HOT! There is also a sauce called "Jerk BBQ sauce" which tastes a bit different if you wanna' switch up the style a bit.
