Has anyone got a good, and simple recipe for homemade apple pie?

Whichever one you use make sure to add lots of cinnamon and some nutmeg and if you want to get real cute you can add toffee chips.

Number 6 is right - lots of cinnamon and some nutmeg. I find that sweetening with brown sugar rather than white sugar compliments the flavour of the cinnamon & nutmeg.

for simplicity i use Tenderflake Pie Pastry (2 sheets)
using a 9" pyrex pie pan i do the following:
peel,core and cut into 1/4 or 1/8 " slices, Granny Smith or northern Spy apples, enough to fill the pan.
in a pan large enough to take all the apples i do this
melt over medium low heat 1/2 cup butter, 1/4 cup backed brown sugar, 1tbsp cinnemon, 1 tsp allspice, 1 tsp salt. Mix with spoon and then add apple slices and remove from heat and let sit 10 mins
line pie pan with 1 of the pastry pieces and trim excess so it hangs over about 1/2"
spray the pastry with pam (doesnt get soggy with juice)
add apple mixture and then top with the other piece of pastry. Cut the extra off like before and then combine both pastry slices together by pinching edges together with fingers. Finally poke some holes in the top with a fork (make up a simple design or about 6 pokes)
divide 1 egg and beat yolk with fork and using a brush (a NEW 1" cheap paint brush will do) brush yolk over entire top and sprinkle with about 1 tbsp of sugar
bake in a preheated 425 oven for 15 mins, then reduce to 350 and cook untill crust(and bottom) are golden.

I'm going for the Apple Crisp, and using Macintosh apples.
Apple Crisp
4-5 medium tart cooking apples, sliced (4 cups)
2/3 cup packed brown sugar
1/2 cup all-purpose flour
1/2 cup quick-cooking or old-fashioned oats
1/3 cup butter or margarine, softened
3/4 teaspoon ground cinnamon
3/4 teaspoon ground nutmeg
Ice Cream if desired
1. Heat oven to 375ºF. Grease bottom and sides of square pan, 8x8x2 inches.
2. Arrange apples in pan. Mix remaining ingredients. Sprinkle over apples.
3. Bake about 30 minutes or until topping is golden brown and apples are tender. Serve warm with Ice Cream.
