I was wondering if anyone has any good cookie recipies for X-mas. Since I'm not working now I've decided to take up baking with all this extra time on my hands! Have tried alot of the Kraft recipies but...hmm... just not doing it for me.

My wife always had excellent success with their recipes.

Not cookies, but a yummy and easy Bar recipe. Tried and true. This and the following are my mother's recipes, and are Christmas standards.
All can be made ahead and frozen.
Condensed Milk Bars
Ingredients
2 cups graham cracker crumbs
1 14 oz. sweetened condensed milk
1 cup semi sweet chocolate chips divided
½ chopped walnuts or pecans or coconut
In a bowl combine cracker crumbs and milk. Stir in half cup chocolate chips and nuts/coconut if desired.
(Batter will be very thick)
Pat into well greased 8” square pan (grease with butter)
Sprinkle top with remaining chocolate chips.
Bake @ 350F for 20 – 25 minutes, or until golden brown.
Cool and cut into bars.
Yields 1 ½ dozen bars.

Another, messy to make, but very good eating.
Chocolate Cherry Balls.
6 oz. package of semi sweet chocolate chips
1/3 evaporated milk (canned)
1 ½ cups sifted icing sugar
1/3 chopped walnuts (optional)
1/3 cup chopped well drained maraschino cherries
1 cup flaked coconut to roll them in.
Combine chocolate chips and milk in saucepan and set over low heat.
Heat stirring constantly until chocolate is melted. Remove from heat.
Add sugar and stir until well blended, then stir in the walnuts (optional)
and cherries. (Dry cherries on paper towel)
Set saucepan in fridge. Chill until mixture is firm enough to handle. At
Least 20 minutes.
Shape into 1” balls and roll in coconut. Set in a pan lined with waxed paper
And chill very firm, about 4 hours.
Keep chilled until serving time.
Makes 2.5 dozen.
Tip:
Can be made ahead of time and frozen, take out of freezer 20 minutes ahead
Of serving time.

Tess I made these and they were delicious yumm!!!!! I can cook anything but this is my first baking year. Second batch I added a little bit of ground pecans and a pinch of vanilla,also very good. Hope you don't mind. Thanks for the recipe.:)

I'm just curious, not being possessive or anything, but is this my recipe? I can't remember if I posted it here or not at some point. It's identical to my grandmother's recipe. It also makes really nice rolled cookies (rolled out flat, cut with cookie cutters) and the real beauty of it is that the dough doesn't get hard when you reroll/recut it, unlike most cookie doughs.

Use the recipe Tess posted, it's traditional scottish shortbread - if my Scottish grandmother is to be believed anyway. I've been making it for years and it's the best recipe out there for a simple traditional shortbread.

Ingredients are the same, but different values, also so is the baking temp.

Maybe Tess' grandmother published it in the newspaper and your grandmother cut it out and has passed it on to your mother and now you?

No, my Grandmother brought it with her from Scotland in 1918.
These are also very good :)
CHIPITS PARTY SIZED BROWNIES
Ingredients
2 Cups (500ml) Hershey’s Chipits
1 Cup (250ml) Butter
1 ¼ Cups (300ml) all purpose flour
1 Cup granulated sugar
4 eggs
2 tsp. (10ml) baking powder.
Directions
Melt together the butter and Hershey’s Chipits, in a double boiler. Stir in the granulated sugar, flour, the eggs, and the baking powder. Blend with a fork.
Spread the mixture evenly into a greased 13x9” pan.
Bake @ 350F for 30 minutes or until cake tester (or fork) has moist (not wet) crumbs on it.
Cool.
Glaze
¾ cup Hershey’s Semi Sweet Chipits
2 tbsp. butter
2 tbsp. water
Combine all ingredients in a double boiler and blend until melted, and smooth. Cool.
Spread over surface of brownie.
Cut into squares.
Makes about 64 brownies.
(This recipe is party sized, you can always half it.)

This one is always the most-requested recipe each Christmas. And, believe it or not, Newfy Screech works the best.
Booze Bars
Base Ingredients
2 cups (500 ml) all-purpose flour
1 / 2 cup (125 ml) packed brown sugar
1 / 4 tsp (1ml) salt
1 cup (250 ml) butter, cubed
Topping
1 cup (250 ml) packed brown sugar
2 tbsp (25 ml) all-purpose flour
1 / 3 (75 ml) whipping cream
1 / 4 (50 ml) dark rum
1 / 4 (50 ml) corn syrup
2 tbsp (25 ml) butter, cubed
1 1 / 2 cups (375 ml) chopped pecans
Method
1. Preheat oven to 375 degrees F.
2. To make base, combine flour, brown sugar and salt in a food processor. Add butter and process to fine crumbs. Line bottom and sides of 13 x 9 inch baking pan with heavy foil. Pat crumbs in bottom of pan. Bake for 20 minutes or until light golden. Let cool.
3. To make topping, combine brown sugar and flour in a saucepan. Stir in cream, whisky, corn syrup and butter. Place over medium heat and cook, stirring, until sauce boils. Let boil for 1 minute. Let cool slightly.
4. Sprinkle pecans over cooked base, drizzle with butterscotch sauce. Bake for 15 to 18 minutes or until filling is bubbly. Place on rack and let cool completely. Lift foil out of pan and cut into bars. Makes about 35 bars.
