Hi guys
Im looking for a tex mex recipe. Im going to a spanish themed party, and I can do the usual enchilladas or tacos, but im looking for something other than the normal stuff I would cook.
I grew up in Texas so im well aware of the foods, but just wondered if anyone had a favorite recepie they might throw at me.

You are the one that was born in Texas, so you could teach us something about TexMex recipes, I just Googled and got this:

i was raised there..not born there. I was born in KW, so I am a canadian. I have many recepies, but was looking to see if anyone had one they liked. I tried not to google search mainly so I could get peoples opinions on the recepies. But that looks pretty good. thanks!

believe it or not.. I LOVE to cook, but the one thing I cannot make, is rice. Period. When i make it, it comes out non edible.

believe it or not.. I LOVE to cook, but the one thing I cannot make, is rice. Period. When i make it, it comes out non edible.
Don't mean to pester you ... but why is it non-edible ... too hard or too mushy? I usually find shortage of moisture and/or time is the cause of my rice failures. I also have better results with the "5-minute" quick rice by Uncle Ben's (name brands).
Here's a recipe I got from an Uncle Ben's box in about 1972 and I still make this. The extra moisture and cooking time will correct "not quite done" rice. I had to post this - it's very easy and very good. Try it for yourself, first...
MEXICAN SKILLET SUPPER
450 g ( 1 lb.) ground beef
125 ml (1/2 cup) chopped onion
412 ml (14 1/2 oz) 1 can tomatoes
10 ml (2 tsps) instant beef bouillon or 2 beef bouillon cubes, crushed
12 ml (2 ½ tsps) chili powder, or to taste
375 ml (1 ½ cups) cooked rice
250 ml (I cup) shredded lettuce
250 ml (I cup) shredded cheddar cheese
Cook the rice and set aside (refrigerate). Brown beef and onion in a 25cm (10 inch) skillet; drain off fat. Add the can of tomatoes (including the liquid), bouillon & chili powder. Bring to a boil, stirring to dissolve bouillon and break up the tomatoes. Stir in cooked rice. Reduce heat, cover and simmer until liquid is absorbed, about 5 minutes or more. Top with shredded lettuce and cheese before serving.
Makes 4 servings.

nah ya arent pestering me. Ive tried everything. And no matter what I do.. its no good. Ive even tried in a rice cooker. And its never worth eating, too hard, too soft, too grose. Like really, its never edible. Ill get someone else to cook the rice. I know it sounds bad... but its true I cannot make rice. Ever. Ive tried hundreds of times.

I got a rice cooker, if you still got it: rinse one cup of rice, add a cup and a half of cold water, it should be perfect. come on...try one more time :)

lol I gave up on rice ages ago. I get someone else to make it. Ive tried in a rice cooker, xwife set out all the ingredients, everything all I had to do was put them in, and turn it on, and I still managed to mess it up.
lol sad i know.

I can cook almost anything else. Just for some reason rice and I dont get along. Ive tried every type and method I could imagine, doesnt work. Thats ok, Ill get someone to make it..lol.
