Pork liver is from yucksville, but calves or baby beef is great with crisp bacon and homemade chilisauce.

Sorry, I was talking beef liver. Hadn't even thought about pork liver. I will change things accordingly.

I'm not too fond of beef liver,I'd much rather eat camel liver with sardine soup.

LOL, sounds like a friend of mine that drowned his green beans with gravey so that he couldn't taste them, mind you he cooked the H out of them and they were limp as well.

Cooking liver so it tastes good is an art.

(1) Liver

...you're right Frogy...unfortunately there are no artists in Listowel!... so I'm not going to count that dinner as my once a year feed of liver...

Love it... as well as chicken's , duck's, deer's...etc, but have never tried pork liver....a friend told me the best is Lamb's... anyone tried it?

I wouldn't say that, myself although I hate liver. I like marsher, love game meats, moose is one of my favorites. Squirrel is pretty good too(Tastes like chicken)

Actually I was talking about the livers of these animals... but I do enjoy the meats as well.

I used to belong to an Optimist club that held a wild game night once a year... got to try a lot of different meats then... wild boar is good. I had Snapping Turtle up north and alligator in the states.

Never had the op to try gator, but I've had snake when in Mexico

Putting aside the chilisauce you are a gourmet.....thinly sliced, dredged in flour and dropped in a very hot frying pan and burnt butter for about 15 seconds a side and then smothered in onions or a side of bacon with waffle fries and a person knows what heaven will be like.

This is right up there with steak and kidney pie.

I have an extreme dislike for liver, my parents always try and sneak it in my food but I can recognize it easily.

Tiny Bennet, once wrote in his cooking column, that people who don't like liver, haven't had it cooked right. The key is to get pieces that are of a uniform thickness, blanch in boiling water, dredge in flour, and fry in very hot lard, for 90 seconds per side, so that there is still a line of pink showing in the middle. Melt in your mouth tender, and absolutely delicious. I figured out a way to BBQ it, by coating it in Miracle whip. It came out rather well.

If I do it on the bbq, I just keep it basted with my favorite bbq sauce over a low heat. Just have to be very diligent to not overcook it.

:nne: I love liver, that as long as it is calve's liver. All other types, I am not too fond of.
