Does anyone here have a good recipe for Butterscotch Pie
I need it for next weekend. To be on the good side of my dad I need to supply him with a butterscotch pie... You see we are going to talk about his will next weekend and I am in competition with my 2 sisters in which he dearly loves.
So I have to work at it a little harder to be in the money...So I thought what a better way to say how much I love this man but to feed him butterscotch pie..
I will be so in the money with this....I can taste it..a pun there
(p.s. this is all in good humor please don't take offense to it.)

It's nice to see you poking fun :) I've never heard of butterscotch pie, I'll be watching to see what goes in it :ygu:

Give me an idea of what it's like, texture, taste, and I'll see what I can find. All that comes to mind is a pudding based pie but I don't think that's what you're after

It seems there are hundreds of variations. I've never had or made it..my luck first time I did it would be a disaster and I'd be left out of the will. ;) Or I'd poison someone lol

An example:

Butterscotch Pie

Recipe By : "Homemade Happiness" -St.Anne's Parish, Caribou, Maine

1 cup brown sugar
4 tablespoons cornstarch
1/2 teaspoon salt
2 cups MILK -- warmed
2 egg yolks -- beaten
1 tablespoon butter
1 teaspoon vanilla
1 pie crust -- baked

TOPPING:
2 egg whites -- beaten stiff
1 pinch salt
4 tablespoons powdered sugar

In top of double boiler, combine brown sugar, cornstarch, salt and milk. Stir and keep stirring until it thickens. Add egg yolks, keep on cooking, stirring until it thickens. Remove from heat and add butter and vanilla; keep on stirring, pour into cooked pie crust. Combine the topping ingredients to make the meringue and spread over filling and bake in 400 degree oven for 5 minutes or until brown.

Tess that sounds great.
My SIL tells me that she buys the pudding that you have to cook and puts bannana's in the bottom and pours the pudding over top and than top with bannana's and whip cream so maybe I will try that way.

That sounds really good too, and a lot easier. The frozen pie shells make everything much easier too.

Are you making a trial one first?

I went the lazy way (sort of) took a long time I used the cooked pudding and it turned out wonderfull. really thick...he even said it was one of the best that he has ever had.

Butterscotch Pie .... ummmm ... good .... but you are mentioning this when I am full of lemon pie, apple pie, turkey, turnips, potatoes, ham, gravy ......

Now I want Butterscotch Pie! Ain't fair .... it's going to take me a month to get back to normal weight!

Actually he was so gratefull that he gave me the pictures and the baseball that I have been asking him for
The pictures and Baseballs are from the Great LOU JOHNSON (baseball team) he played for the Toronto Maple Leafs before going to Sarycuse... and eventually ended up playing with the LA Dodgers.
He was a very close friend to us I called Uncle Lou and we used to have so much fun....
so I finally got to have all his pictures and balls that has been signed by a lot of old time people.

Great...glad the meringue worked...I vaguely remember Lou Johnson, but I have always been a American League fan and he spent most of his career in the "hated" National League.
