Anyone ever done a processor upgrade to a dual 867 MDD? If so what upgrade did you go with and how much of a difference did you really see in the performance?

I didn't go from as fast a CPU(s) as yours, but if I were you I would probably go no less than a dual 1.4GHz upgrade for a speed increase worthy of the investment. Thing is, what are you doing with the Mac? A dual 867MHz is quite sufficient for typical use and even moderate consumer-level media work. Other very important factors, in order of importance, are:
RAM: Go for at least a gigabyte, no matter what you do with your comp. It's so cheap these days it is silly not to max it out and OS X loves physical RAM.
A Quartz Extreme compatible GPU: As OS X farms all the screen redraws out to a compatible cards, its Quartz Extreme technology results in smoother overall performance. Minimum requirement for QE: 32MB Radeon or better.
Use the latest version of Mac OS X. Every major revision gets faster and better optimized -- and there are superior UI technologies in them that literally improve HOW you use your computer, such as Panther's 'Expose" and Tiger's "Spotlight".
