My server's maxtor burnt out (old p3 1ghz w/60gb) and I need a new HDD - but what type do I need? IDE/S-ATA? Im pretty sure my maxtor was a 133 IDE.

You need IDE.
Any of these (http://www.canadacomputers.com/index.php?do=ShowProdList&cmd=pl&id=HD.443) will do.

Why are the WD's and SG's all ATA 100? Will that compromise speed of the HDD?

The speed of the HDD will not be compromised.

Most socket 370 PIIIs above 700Mhz support 133Mhz FSB. The only 1Ghz chips which support 100Mhz are the ones intended for slot 1 upgrades.

The maximum bandwidth of ATA100/133 interface doesn't even come close to what the system bus of any ATX based PC is capable of. (And of course, hard drives do not take full advantage of the IDE interface by a long shot either) Heck, even the PCI bus clocked at only 33Mhz can move 132Mb/s - therefore, FSB is not the issue.
