PEACHES AND CREAM PIE

Ingredients

1-1/2 cups finely crushed Nilla Vanilla Wafers
1/3 cup butter, melted
1 pkg. (85 g) Jell-O Orange Jelly Powder
3/4 cup boiling water
2 cups ice cubes
1-1/2 cups thawed Cool Whip Whipped Topping
1 cup chopped peeled fresh peaches

Directions

COMBINE crumbs with butter. Press firmly onto bottom of 9-inch pie plate.

STIR jelly powder into boiling water until completely dissolved. Add ice cubes. Stir until jelly thickens; remove any unmelted ice. Add whipped topping; stir with wire whisk until well blended. Gently stir in peaches.

REFRIGERATE 15 min. to thicken (consistency of unbeaten egg whites) so you can pile the filling high. Spoon into crust and refrigerate 3 more hours or until set.

Prep Time: 15 minutes
Ready In: 3 h 30 minutes
Serves: 8

Sounds great Tess. Not fond of orange flavoured Jello. I wonder how strawberry would work as a substitute?

I would think as long as you like those two tastes together it would be fine.

Will change the colour though.

Should be good.

BTW, as for the pie shell, I just buy the ready made graham cracker ones.

Cant wait until the fresh peaches come out. I assume fresh peaches will have to be blanched to remove the skin and cut into small chunks? :vxd:

A pic might help. The recipe came from the Kraft web site.

Doesnt say to blanch, but I'm sure you could, I didnt. Also cut up any way you want, I cubed what I could, the rest was random but not too big.

The reason I was saying blanch them first to remove the skin was simply because some people have a hard time digesting the skins. I think it would just taste better skinless.

I peeled them, I dont like the peach fuzz either.
